Game Day Baked Chicken Nuggets
Great served hot or room temperature.
Cook early in the day to enjoy during the game. No greasy fingers!
Take on a picnic.
2 Chicken Breasts, boneless, skinless (about 1 lb. total)
1 ½ cups Panko breadcrumbs
1/3 cup grated Parmesan
½ tsp. Salt
1 ½ Tb. Vegetable oil
½ cup Plantation Breader
3 large Eggs, lightly beaten
Preheat oven to 400⁰F. Cut chicken into 2-inch pieces.
Spread panko on a rimmed baking sheet and bake until golden brown, 3 to 4 minutes. Transfer to a shallow dish and add Parmesan and salt; drizzle with oil and stir to combine.
Place Plantation Breader and beaten eggs in separate shallow dishes.
Increase oven temperature to 450⁰F. Set a wire rack in a rimmed baking sheet.
Moisten the chicken. In batches, coat the chicken with Breader, pressing firmly to achieve a good coating. Dip in the egg, then coat with panko, pressing to adhere. Place pieces on the rack without touching. Bake until chicken is cooked, about 12 minutes, flipping halfway through.**
*Make certain the chicken is moist so as to achieve a good coating of Breader. The seasoning is in the Plantation Breader.
**The cooking time is for large chicken breasts. Adjust cooking time downward for breasts from smaller chickens.
